Banana Walnut Muffins

Ingredients
  • 1 ½ cups 180grams all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 tsp salt
  • 3 ripe bananas smashed
  • 1/2 cup 4oz(113grams) melted butter
  • ¾ cup 150grams sugar
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or chocolate chips
  • For thick Streusal topping:
  • 1/2 cup rolled oats
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon powder optional
  • pinch of salt
  • 2 tablespoons butter solid
Instructions
  1. Preheat oven to 350 degrees Fahrenheit / 175 Degrees Celsius.
  2. Whisk together flour + baking soda + baking powder + salt and keep aside.
  3. In a mixing bowl, mix the butter into the mashed bananas with a wooden spoon. Mix in the sugar + egg and vanilla. Add the flour little at a time and mix until just incorporated. Fold in the chopped walnuts or chocolate chips.
  4. Scoop mixture into prepared muffin pan lined with cupcake liners till 3/4th full. Divide the streusel topping evenly on all the muffins.
  5. Bake 20-25 minutes until top is golden brown and once a toothpick inserted into the center of the muffin comes out clean. Remove the muffins and place them on a cooling rack.

  7. Add oats + flour + brown sugar + cinnamon powder + salt to a bowl and mix well. Add the butter and mix it up with fork.
