Pizza sauce
Ingredients
  • 3 medium tomatoes pureed 2 cups puree
  • 1/2 bunch cilantro / coriander leaves
  • 1 clove garlic option
  • 1 1/2 teaspoon salt or to taste
  • 1/2 tablespoon vinegar
  • 1 tablespoon oil olive oil recommended
  • pinch of pepper powder optional
Instructions
  1. Puree tomatoes + cilantro + garlic + salt + pepper. Transfer into a saucepan, add oil + vinegar, bring it to a boil and then reduce the heat to medium low. Walk away and keep checking once in a while. The sauce will simmer and reduce to half. It will take approximately 25-35 minutes. Turn on a kitchen timer so that you don't forget the simmering sauce.
  2. Let cool, transfer in a glass container with a tight fitted lid and place in the refrigerator. Use this within 7-10 days.
Recipe Notes

If making a pizza dough feels like too much work then apply the sauce lightly on a bread, top with vegetables or meat, add cheese and broil till the cheese melts and the bread browns. Makes an easy and quick snack.
For an different twist add green chillies to the puree. Use the herbs of your choice. Some herbs like thyme can be overpowering so use accordingly.
