The lamb rogan josh recipe is super easy to make. The flavor of yogurt and the spices will make your tastebuds craving for more. You can substitute lamb with mutton. It’s perfect for a cold day or a cozy evening. You can also make this in your Insta pot.

Ingredients
  • 1 kg lamb or mutton cut into medium pieces
  • 3 tablespoons mustard oil or ghee clarified butter, Please refer notes
  • 1 cup thick yogurt lightly beaten without lumps
  • 1/2 cup hot water
  • WHOLE SPICES:
  • 1 Cinnamon stick
  • 2 bay leaves
  • 4 green cardamom
  • 3 black cardamom
  • 1 teaspoon asafoetida or hing powder
  • SPICES:
  • 4 tablespoons Kashmiri chili powder | paprika
  • 2 teaspoons dry ginger powder
  • 2 teaspoons fennel seed powder
  • 2 teaspoons salt or to taste
  • GARNISH:
  • Pinch of saffron
  • 1 teaspoon cumin powder
  • finely chopped cilantro | coriander leaves
Instructions
  1. Wash and drain the lamb well in a colander to remove excess water. Squeeze the water out if needed. Gather all the ingredients as per their groups.

  2. Melt ghee in a deep pan or pressure cooker on medium heat. (If using mustard oil, heat the oil till you see smoke but do not let it burn.)
  3. Add whole spices + hing|asafoetida and sauté for about 30 seconds so that the oil is infused with the aroma of spices.
  4. Add the lamb pieces and sauté on high heat for about 5 minutes till the meat is brown.
  5. Add the Kashmiri chili powder + ginger powder + fennel powder + salt and sauté for another 5 minutes.
  6. Now add the beaten yogurt + 1/2 cup hot water and mix everything well.
  7. Once everything comes to a boil turn down the heat to low and cover the pan with a lid and let it cook till the meat is tender. It may take about 45 minutes to an hour. Keep checking every 10 to 15 minutes and give it a quick stir. You can also use Insta Pot. (If using a pressure cooker, cover the lid and cook on low heat till you hear about 3 whistles).
  8. Once the lamb is cooked, open the lid and let it simmer for an additional 10 minutes.
  9. Sprinkle crushed saffron and cumin powder and turn off the heat.
  10. Garnish with coriander or cilantro leaves.
  11. Serve with rice, roti, or naan.
Insta Pot Method:
  1. Wash and drain the lamb well in a colander to remove excess water. Squeeze the water out if needed. Gather all the ingredients as per their groups.

  2. Press the sauté button on your insta pot and set to 10 minutes. Add ghee (clarified butter). Add whole spices + hing | asafoetida and sauté for about 30 seconds so that the oil is infused with the aroma of spices.

  3. Now add the lamb pieces and sauté for about 5 minutes till the meat is brown.

  4. Add the kashmiri chili powder + ginger powder + fennel powder + salt and sauté for another 5 minutes.

  5. Now add the beaten yogurt + 1 cup hot water(Insta pot requires more liquid compared to other cooking methods) and mix everything well.

  6. Cover your insta pot and select the meat button and set to 45 minutes. Also seal the vent.

  7. Once the timer is done, wait for another 5 minutes before opening it. Release the steam and open.

  8. Press the sauté button, set to 5 minutes and let it simmer. If the gravy is thin you can increase the time to additional 5 minutes.

  9. Sprinkle crushed saffron and cumin powder and turn off the heat.

  10. Garnish with coriander or cilantro leaves.

Recipe Notes

1. If using mustard oil to make rogan josh, it is important to bring it to a smoking point on medium heat or else it can taste bitter. 2. The recipe of rogan josh had evolved over the years with different versions available.
