Garlic Naan - with or without Oven

Servings: 6 naans / flatbreads
Ingredients
  • 2/3 cup warm water
  • 2 teaspoons active dry yeast
  • 1 tablespoon sugar
  • 4 tablespoons melted butter
  • 2 tablespoons yogurt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 and 3/4 cup all purpose flour
ADDITIONAL
  • oil for coating
  • melted butter for brushing
  • 5-6 cloves of garlic finely chopped and minced (optional)
  • chopped cilantro for garnish Optional
Instructions
  1. Add warm water + yeast + sugar + 1/2 cup of flour in a mixing bowl and keep it aside for 30 minutes.
  2. Add melted butter + yogurt + baking powder + salt and remaining all purpose flour and knead for about 6-8 minutes into a soft yet slightly sticky dough. Coat the dough with just enough oil, cover and let it rest for 30 minutes or until the dough almost doubles.
  3. Punch down the dough and divide into 6 equal portions. Roll into a circle about 1/8 inch thick. (Cover the dough and flattened naan with a kitchen towel when working with remaining circles).
  4. When placing on the cooking medium, stretch one side of the dough to give it a slightly elongated shape.
Stovetop method: Using a cast iron girdle/skillet or wok with a lid.
  1. Place the girdle on high heat. Brush a thin layer of butter on the bottom of the skillet. Lay the naan on the skillet and place the lid. Cook for 1 minute until it puffs up unevenly and the bottom is browned. Flip the naan, replace the lid and continue to cook until the other side is browned. A few black blistered charred spots are desirable.
Oven method: Preheat the oven to 550 Degrees Fahrenheit/280 Degrees Celsius.
  1. Lay the flattened naan on baking sheets and place it on the bottom rack of the oven for 2-3 minutes or till the top puffs up unevenly. Take the sheet out of the oven, flip the naan and place it in the oven for another minute so that the underside of the naan browns.
  2. Brush with some butter or clarified butter and sprinkle some finely chopped cilantro/coriander leaves while the naan is hot.
Recipe Notes

For Garlic naan: Roll the naan into small circle. Spread some finely chopped and minced garlic on the naan and flatten it further. Follow the cooking process.
