Passion fruit juice is one of the most exotic and refreshing drinks out there.
To remove the pulp, cut the passion fruit in half and scoop the mixture out.
Transfer the pulp to a food processor and process on low speed till the juice and seeds separate out. It's ok if the seeds break but don't let it grind too much.
Sieve the mixture through a fine strainer and use it in cocktails or mocktails.
Make a simple syrup by adding 1 cup of water and 1 cup of sugar to a saucepan. Place it on medium-low heat and simmer until the sugar is slightly thick. (This is the recipe for simple syrup. You can use it in cocktails or mocktails)
Add the strained passion fruit juice to the saucepan and simmer it for 5 minutes. Turn off the heat and let it cool completely.
Transfer into a sterilized glass bottle and store it in the refrigerator. Use the syrup as needed.
The syrup should stay good in the refrigerator for a month or two.
To prepare, Add 2-3 tablespoons of syrup to a glass and fill the remaining glass with water or soda. Taste and adjust the sweetness by adding more syrup or liquid.
To add raspberries, press a raspberry to the bottom of the glass and fill the glass with passion fruit juice.
1 Kg (2.2lb) passion fruit yields 2 cups of pulp. (This also depends on the variety of passionfruit)
2 cups of pulp with seeds = 1 and 1/2 cup syrup after processing and removing seeds.
The syrup should stay good in the refrigerator for a month or two.
