Ingredients
Watermelon Granita
  • 6 cups watermelon, cut into chunks
  • 4 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/8 cup Sugar or to taste
Cream Granita
  • 1 cup whipping cream
  • 2-3 tablespoons confectioners sugar
Instructions
Watermelon Granita
  1. Blend the watermelon cubes in a blender along with sugar, salt and lemon juice. Do not add any water. Taste and adjust the flavors as needed.

  2. Strain it through a sieve. Swirl with a spoon and press it if the liquid is not going through. Pour into a metal tin, something like 9 X 5 metal cake pan or freezer proof plastic bowl and cover with plastic wrap or lid.

  3. Place the pans in the freezer for about 2 hours till the sides begin to crystallize. Fork the mixture and freeze again for another 30 minutes.

  4. Add a scoop or two of watermelon granita in a serving cup. Garnish with mint leaves if needed. Top it with cream. Recipe follows.

Cream Granita Topping
  1. Mix confectioners sugar with cream and mix with a spoon. Taste and adjust the sweetness as needed.

  2. Transfer into a metal or a plastic container and place it in the freezer for about 2 hours.

  3. Once the sides crystalize, fork the mixture and freeze again for another 30 minutes.

  4. Add it on top of watermelon granita before serving or alternate both layers.

Recipe Notes

Healthier Choice:
Add honey or maple syrup to sweeten the watermelon. 

For Tangy Indian style:
Season the watermelon puree with chaat masala (a tangy Indian spice) or amchur (dried mango) powder. 

Tip: Instead of freezing it for a long time and going through the labor work of scraping right before serving, you can also scrape the granita beforehand and place it back in the freezer. This way, when the time comes to devouring it, you will have the perfect texture waiting for you.

To achieve the best quality, don't let it set in a freezer for more than a week; when it's time to serve, make sure the granita stays on the counter for about 10 to 20 minutes. Finally, shave with a spoon, ice cream scoop, or scrape with a fork.
