  • 2 tablespoons plus 1/3 cup unsalted butter softened & divided
  • 1 garlic clove minced and finely chopped
  • 1 tablespoons parsley finely chopped
  • 1/4 teaspoon salt only if using unsalted butter
  • 2 cups mozzarella cheese shredded
  • 1 baguette white 2 feet long
  • 1/2 cup grated parmesan cheese optional
  1. Preheat the oven to 200 Degrees Celsius / 400 Degrees Fahrenheit.
  2. Melt 2 tablespoons butter in a pan and add garlic. Cook for about 30 seconds.

  3. Transfer the mixture into a bowl. Add the remaining 1/3 cup butter and mix well.To this add salt and parsley and keep aside.

  4. Slice the baguette into 1/2 inch pieces. You will get approximately 26 pieces. Brush the butter on both the sides.

  5. Arrange the slices in a 9*9 inch square baking pan or any pan you have handy.

  6. Insert about 2 tablespoons of mozzarella cheese between two slices.
  7. Brush the remaining butter on top and sprinkle with parmesan cheese.

  8. Cover the top of the pan with aluminum foil and bake for about 20 to 25 minutes till the cheese melts well. (Check the notes to see how to make ahead of time)

  9. Wait for about 5 minutes and serve warm. You can also transfer the slices onto another serving place since the pan will be extremely hot.

Recipe Notes

1. To make ahead of time: Wrap the pan with plastic foil and store it in the refrigerator for 2 to 3 days. When you are ready to eat, remove the plastic foil, wrap with aluminum foil and bake as per the directions.

2. To freeze: Arrange the slices in a freezer-safe container and cover with an airtight lid. Let it thaw on the counter for 30 minutes or overnight in the refrigerator before you bake.

3. Leftovers: Leftovers can be reheated in microwave directly or in an oven by wrapping in aluminum foil

Serving Tip:

Make sure the freshly baked bread is cooled down for 10 minutes before serving. This will help to set the cheeses and also cool down the cheese a bit so that it is not extremely hot.

When you are serving this at a get-together or at a kid's party, transfer the garlic bread to another serving plate since the pan could be very hot and burn anyone easily.
