I once got corn bread from whole foods and fell in love with it ever since. Every time I go there I know I have to get this. Also I have been trying to mimic that recipe ever since. This is the closest I could get to and it’s still awesome. I especially like it when there is healthier substitutions for recipes and especially when using honey instead of sugar. For me it’s reducing the guilt :).
This is one of the easiest recipes i have come across. I adapted this from food network show ” down home with the Neely’s”. With the reviews so good I knew I had to try this. Best way to eat this, warm it up and top it with butter.

Honey Cornmeal Muffins
Servings: 12 muffins
Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 1 cup whole milk
- 2 large eggs
- 1/2 stick butter melted
- 1/4 cup honey
- Special equipment: Muffin tin.
Instructions

Preheat oven to 400 degrees F.

Into a large bowl, mix the cornmeal + flour + baking powder + sugar + salt.

In another bowl, whisk together the whole milk + eggs + butter + honey.

Add the wet to the dry ingredients and stir until just mixed.

Place muffin paper liners in a 12-cup muffin tin. Evenly divide the cornbread mixture into the papers. Bake for 15 minutes, until golden.
