Food brings back memories, some good ones and ehhm – some not so good ones. Have you been in a situation where someone has refused to share their recipe?. I understand if they are making money out of it or that recipe has been in the family for years, but seriously! hiding a fruit cream recipe.
This happened to me few years ago. I went for dinner to someones place and then she served this beautiful creamy dessert. When few of us raved about the dessert and asked what are the ingredients, she straightaway refused to give the recipe saying its a secret. I did not have a blog then and was far away from starting one. Even if I had a blog I wouldn’t have published a recipe without her consent. From that day on I am bit reluctant to ask for a recipe unless they themselves mention. 🙂
Fast forward few months, I had this fruit cream at a friends place and told her I cannot stop myself from gorging. ‘Its so easy to make, its just sour cream and heavy cream’, she added. 🙂
This fruit cream is one of the easiest desserts you can put together, just like the the no bake pot de creme/no bake pudding and chocolate mouse. Doesn’t matter if you are making for 2 or for a crowd. Also, this chilled fruit salad is excellent for summer.
Use your favorite fruits. I love the canned mandarin oranges, but my favorite is the canned tropical fruits with a mix of fresh fruits.
That way you don’t have to chop lot of fruits.
- 1/2 cup 4oz(120ml) heavy whipping cream
- 1/2 cup 4oz(120ml) sour cream
- 3-4 tablespoons sugar
- 1 and 1/2 cup fruits fresh or canned
- 1/2 cup chopped walnuts or pecans
Beat the heavy whipping cream with sugar till soft peaks form. (Chilling the bowl and the whisk at least 15 minutes before whisking makes the work lot easier)
Add the sour cream to the heavy cream and beat till everything incorporates well. (Taste and adjust the sweetness as needed.)
Add the fruits, mix well, transfer into a serving bowl, sprinkle with chopped walnuts, cover and refrigerate for an hour or two.(Alternately you can also layer the fruits and the cream)

Pineapple, mangoes, pear, grapes, apples are few of the other options. Some people prefer banana and marshmallows too.
If you are making a big batch, you get a big cans of tropical fruits in syrup at Bjs and similar wholesale stores.
If using canned fruits, drain the fruits from the syrup well before adding to the cream.
