Although you don’t find blueberries in Kerala, I have scheduled this blueberry drink post from the sunshine state of Florida.
Enjoy this easy refreshing, vibrant summer drink or strawberry lemonade while planning your summer activities.
Cook the blueberries with sugar and lemon juice. Let it simmer for a while. Strain it and use it to make this awesome drink.
- 1 cup blueberries
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 tablespoon water
- Wash the blueberries well, drain it and add sugar + lemon juice + 1 tablespoon of water to blueberries and place it on medium high heat. Once it stats bubbling, turn the heat to low and let it simmer for about 10 minutes.
- Strain the syrup through a fine mesh. Let it cool.
- Add 2 tablespoons of syrup to 1 cup of water, throw in some ice and mint leaves and serve. (Taste and adjust the sweetness as needed by adding more syrup.)
- You can also store the syrup in an airtight jar in the refrigerator.
