
The not so good thing about banana is, once its overripe you can barely have it and most of the time it ends up in trash. However, the good thing is, it can be used to make muffins, banana bread and banana cake. As weird the banana cake sounds, it actually tastes great.
Nuts are a great addition to these muffins. Grab it on the go or freeze it for later.

Banana Walnut Muffins

Ingredients
- 1 ½ cups 180grams all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 tsp salt
- 3 ripe bananas smashed
- 1/2 cup 4oz(113grams) melted butter
- ¾ cup 150grams sugar
- 1 egg beaten
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts or chocolate chips
- For thick Streusal topping:
- 1/2 cup rolled oats
- 1/2 cup all purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon powder optional
- pinch of salt
- 2 tablespoons butter solid
Instructions

Preheat oven to 350 degrees Fahrenheit / 175 Degrees Celsius.

Whisk together flour + baking soda + baking powder + salt and keep aside.

In a mixing bowl, mix the butter into the mashed bananas with a wooden spoon. Mix in the sugar + egg and vanilla. Add the flour little at a time and mix until just incorporated. Fold in the chopped walnuts or chocolate chips.

Scoop mixture into prepared muffin pan lined with cupcake liners till 3/4th full. Divide the streusel topping evenly on all the muffins.

Bake 20-25 minutes until top is golden brown and once a toothpick inserted into the center of the muffin comes out clean. Remove the muffins and place them on a cooling rack.
