Shrimp and cheese croquettes / shrimp cutlets – or try potato and cheese croquettes

Shrimp Croquettes

Shrimp and cheese croquettes / shrimp cutlets / Potato and cheese croquettes

Ingredients
  • 1/2 kg 1 pound peeled and devined shrimp (Check notes for vegetarian options)
  • 2 tablespoons oil
  • 1/2 tablespoon butter
  • 1/4 cup very finely chopped onions
  • 1/2 teaspoon red chilly powder
  • 1/2 teaspoon pepper powder
  • 1/2 cup shredded mozarella or cheddar cheese
  • 1 medium sized potato boiled or baked and mashed
  • salt to taste
  • Bread crumbs
  • 1 egg lightly beaten
  • oil for deep frying
Instructions
  1. Heat oil in a pan on medium heat. Add spices, stir and then add shrimp. Turn the heat on high and sautee till water evaporates. Keep aside. Once cooled, add it to the mixer or food processor and grind to a coarse consistency. Transfer into a bowl, add potato, cheese and cilantro if needed. Taste and adjust the salt.
  2. Roll tightly into small balls or stick.
  3. Dip the croquettes in egg, then roll this in breadcrumbs and deep fry on medium high heat.
  4. Serve with ketchup or a mix of mayonese and ketchup.
Recipe Notes

Vegetarians: Sautee mashed potatoes in light spices. Add cilantro/ coriander leaves, finely chopped green chillies, cheese and follow the above directions.
