Grilled shrimp with pineapple glaze is one of the favorites in our house. Nivaan and Agnel’s love for Shrimp is mind-boggling. Grown-ups love for seafood, I can understand. It’s when Nivaan wants to order lobster, squids, and calamari from a restaurant menu instead of the classic pepperoni pizza and chicken nuggets, I am taken back by surprise. In a way, I am happy that he prefers something different from the same old chicken nuggets. Sometimes it surprises the servers too :).

Pineapple grilled shrimp

It is like a match made in heaven, and this recipe will take less than 30 minutes to make. You can also make the sauce a day in advance, or the morning if you plan to grill in the evening.
Since shrimp | prawns cook quickly and take only 3-4 minutes on each side, it is one of the best recipes to have handy for the busy weeknights or weekends.
To make it taste even better, keep brushing the marinade in between so that more flavor gets absorbed into the shrimp. I used a stovetop grill pan, which makes life so much easier. It’s perfect for grilling sandwiches, chicken, vegetables, you name it. It’s a must-have if you like the charred look and flavor and if you are looking for something for your everyday needs.

- 1 pound (1/2 kg) medium or large Shrimp peeled & deveined
- 1 cup pineapple chunks
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 teaspoon paprika
- 1 clove garlic
- 1 tablespoon olive oil
- 1/2 teaspoon pepper powder
- 1 teaspoon sesame seeds for garnish (optional)
- 2 tablespoons cilantro | coriander leaves for garnish

Wash and pat dry the shrimp. If using wooden skewers, soak it in water for at least 30 minutes to prevent burning.

Add all the remaining ingredients to the food processor and blend until smooth. Taste and adjust the flavor as needed. Transfer the contents to a saucepan.

Let the mixture simmer on low heat till the syrup thickens and almost coats the back of a spoon.

Thread the shrimp onto the skewers and brush the marinade on the shrimp. Heat the grill pan and lightly brush some oil. Place the skewers on it. Let it cook for about 3-4 minutes on each side.

Brush the extra glaze in between.
If using an outdoor grill, timings may vary.
You can cook this in a pan too. Lightly oil the pan and add the shrimp. Keep adding some glaze in between.
